I think you're getting the digital EV3 sensors and the NXT sensors confused. The FAQ clearly states that the NXT sencors will work with the EV3, but not the other way around. See the quote in my answer

The mobile apps will only be able to control the robot, perhaps remotely execute programs, nothing much more then that I think

I do not think that TLG have actually announced it on their website, but all of the articles on tech blogs say so. (The tech blogs have received their info from LEGO's announcement at the Consumer Electronics Show in Las Vegas.) This guy who was invited by LEGO to beta test the new product says so on his blog

As far as I know, the castor wheel is just a component made up of small Technic pieces. The main part you would need is the actual small wheel, which I do not think is included in the retail set. It's hard to know at this point in time; we will have to wait until the parts list is published

Not worth an actual answer, but you can connect one motor to another using a single cable, and turning one motor will turn the other.
